Pala, it might seem hard, just do your homework first - know what you're after and what parts the car should have or what you're willing to sacrifice if there are some parts missing. Ask direct questions. I've imported 4 mustangs from the USA, haven't had a problem and every car has turned up in stronger condition than expected. Found American enthusiasts to be more straight up than Australian's who tend to BS!!

This is the kcar that has been on ebay a few times - Vintage Burgandy convert, repop door tag. When I asked them about the "C" servo auto being present, in a round about way they said it wasnt present.

There is a period somewhere around December 66 where VIN's on blocks for some reason were not stamped.
At the time I was looking at a 67 GT350 and found the casting dates to be matching (heads/block, transmission)with the car but no VIN on the block. Dave MAtthews from the SAAC then confirmed that there appears to be a period where the blocks did not receive VIN's.
I cant remember the exact dates. Maybe Bob or Jeff can confirm.

My 66 GT350 has a T5. The owener replaced the bellhousing, cross member, tailshaft. I believe the speedo cable was also replaced. I'm not sure whether you can use your existing bellhousing, cross member etc - maybe the previous owner thought it was easier just to keep all of the original unmodified bits for originality. No issues with the original headers.
You dont need to cut the floor. Not sure about the original consoles.
You can buy a stock looking shifter that attaches to the T-5 for the "factory" look. I have kept the stock knob. See below.

There is alot of info at http://www.saacforum.com including Rick Kopec's reply to Shelby. Interesting stuff. No doubt SAAC have their faults but at the end of the day SAAC have done a great job with preserving the marque. They took interest in a car 33 years ago that was only just a Mustang.
Sounds like someone has got into Shelby's ear from Team Shelby. Now Shelby has registered the SAAC name right from under their nose.

My 66 Shelby has a T5 with the 2.95 first gear. I believe that you can also get a 3.35 first. It has 3.89 rear end. The combination is fine, although I would prefer a longer first gear. At 60 mph in 5th the car cars on 2200-2300 rpm so it still has some nice punch in 5th.

If the Ivy Green's build sheet confirms it as a GT and is a matching numbers car (doesnt mention), its not too bad. The high US dollar at the moment makes the US asking price reasonable. At 38k usd it would owe close to 50k aud landed - and I assume the price would be neg.

I had the starter off of my 66 GT350 on the weekend for it to be fixed and was surprised with the casting date code of my block. (block is the original Ford VIN stamped)
I had written down the casting date as 5H10 with an assembly date code of 5J3 for the block and the heads both with a casting date of 5H20.
But the block is casted 5G10 (not 5H10). Assembly date code is definatley 5J3. So the block sat around for a couple of months before being assembled - is that unusual? Heads are definatley 5H20 - double checked.
